You can usually safely mismatch the loads as long as you are going into a higher load on the cab, ie an 8 ohm outlet into a 16 ohm cab but you will experience variances in tone and tube life. Never go into a lower ohm cab Ie 8ohm into four as your amp tranny will overheat and probably fry. In terms of stereo the switch usually just splits the load from one jack feeding both speakers to two jacks feeding a speaker each, thu changing the impedances as the speakers will no longer be wired in paralell so the load of that speaker then applies.
